Healthy Banana Cream Pie Smoothie (Vegan)

 Doesn't this look delicious? I love making my daughter healthy smoothies for breakfast or snacks, and I'd like to share a recipe for a vegan banana cream pie smoothie that's healthy! She helped me make it, like usual, so I also added the label "Preschoolers in the Kitchen" because this is one the kiddos can help grab the ingredients for and push the button on the blender!



Ingredients:
- 1 ripe organic banana
- a graham cracker (blend 1/2 into the smoothie, then save the other 1/2)
- 1/2 cup organic almond milk
- 1/4 tsp vanilla
- 1/2 cup vegan vanilla yogurt
- 2 ice cubes

Blend all the ingredients together in a blender, and pour them into a cup. Then sprinkle some graham cracker crumbs on top, and stick part of the graham cracker into the top.

My daughter liked drinking this with a straw, so you might wanna add one!

Spinach Muffins


Ingredients:
- 3/4 cup pureed organic spinach
- 1 tsp all natural vanilla extract
 - 2 brown eggs
- 1/4 cup coconut or sunflower oil
- 1/2 cup of organic cinnamon applesauce
- 2 cups of white unbleached flour
- 3/4 cup raw sugar
- 2 tsps baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt

All you need to do is steam the spinach and puree it, then add the next 4 ingredients into the blender as well and keep pureeing until they're all mixed together. Meanwhile, put the remaining ingredients into a bowl and mix them together. Add the ingredients from the blender into the ingredients in the bowl and mix them together until they are just combined. Fill muffin tins with liners up 2/3 of the way full and bake at 350 for 15-18 minutes, or until a toothpick inserted in the middle comes out clean.

It's so fun and educational to have your kids help out in the kitchen as well. We did this as a preschool baking lesson.
